Brown Banana Monkey Bake


I made this last night with an over ripe banana. However less than 12 hours later, there's less than 10cm left of it as you can see above.

Ingredients /

80g butter
1/3 cup of brown sugar
2 eggs
3 soup spoons of Custard Powder
1-2 over ripe bananas
self raising flour

Cooking time /

190°C goes on your oven dial :)

Beat your butter into a creamy consistency with the electric beaters... Add the brown sugar (beating) Add the eggs one at a time (beating after each)

Add the broken bananas (beating)

Add the custard Powder (beat)

Now comes the fun part. Add flour. Add enough to expand the current liquid to fit the loaf tin/cake tin you are using.

Make sure it beats into a cake mix consistency. Not too stiff and not runny. if too stiff, add some milk (or water if you ain't got no milk left.)

30 minutes later test with a steak knife. If it comes out clean, then CHICKENS DONE! If not, in 5 more minutes repeat the steak knife thing.
